Here’s a simple recipe for a Sugar-Free Energy Dessert that’s healthy, delicious, and packed with natural energy-boosting ingredients. This dessert is perfect for satisfying your sweet tooth without the sugar crash!


Sugar-Free Energy Dessert Recipe

Ingredients (Serves 2-3)

  • Base Layer:
    • 1 cup almonds or walnuts (raw, unsalted)
    • 1/2 cup unsweetened shredded coconut
    • 2-3 Medjool dates (pitted, for natural sweetness)
    • 1 tbsp unsweetened cocoa powder (optional)
    • 1 tbsp coconut oil (melted)
  • Filling Layer:
    • 1 ripe avocado
    • 1/4 cup unsweetened almond butter or peanut butter
    • 2-3 tbsp sugar-free maple syrup or stevia (adjust to taste)
    • 1 tsp vanilla extract
    • 2 tbsp unsweetened cocoa powder (for a chocolate flavor)
  • Toppings (optional):
    • Fresh berries (blueberries, raspberries, or strawberries)
    • Chia seeds
    • Crushed nuts
    • Unsweetened coconut flakes

Instructions

  1. Prepare the Base:
    • In a food processor, blend the almonds or walnuts until finely ground.
    • Add the shredded coconut, pitted dates, cocoa powder (if using), and melted coconut oil. Blend until the mixture sticks together.
    • Press this mixture into the bottom of a small dish or individual serving cups to form the base. Set aside.
  2. Make the Filling:
    • In the same food processor (no need to clean it), blend the avocado until smooth.
    • Add the almond butter, sugar-free maple syrup or stevia, vanilla extract, and cocoa powder. Blend until creamy and well combined.
  3. Assemble the Dessert:
    • Spread the filling layer evenly over the base.
    • Chill in the refrigerator for at least 30 minutes to set.
  4. Add Toppings:
    • Before serving, top with fresh berries, chia seeds, crushed nuts, or coconut flakes for extra texture and flavor.
  5. Serve and Enjoy:
    • Cut into squares or scoop out of the cups. Enjoy your sugar-free, energy-packed dessert!

Tips:

  • For a nut-free version, replace the almonds/walnuts with sunflower seeds or oats.
  • Adjust the sweetness to your preference by adding more or less sugar-free sweetener.
  • Store in the fridge for up to 3 days.
