Old Fashioned Fudge Recipe
Ingredients:
-
3 cups granulated sugar
-
¾ cup unsweetened cocoa powder
-
1 ½ cups whole milk
-
4 tablespoons unsalted butter (plus extra for greasing)
-
1 teaspoon pure vanilla extract
-
Pinch of salt
Optional (for extra charm):
-
1 cup chopped walnuts or pecans
-
Flaky sea salt for sprinkling
Instructions:
-
Prepare the Pan:
Butter an 8×8 inch square baking dish or line it with parchment paper. Set aside. -
Mix Dry Ingredients:
In a heavy-bottomed saucepan, whisk together the sugar, cocoa powder, and salt until well combined. -
Add Milk & Heat:
Pour in the milk and stir gently to combine. Place the saucepan over medium heat and stir constantly until the mixture comes to a boil. -
Boil Without Stirring:
Once it starts boiling, stop stirring. Clip a candy thermometer to the side of the pan and cook the mixture until it reaches 234°F (soft-ball stage). -
Add Butter & Vanilla (No Stirring!):
Remove from heat immediately. Add butter and vanilla on top — do not stir. Let the mixture sit undisturbed until it cools to around 110°F. -
Beat the Fudge:
Once cooled, beat the mixture with a wooden spoon until it thickens and loses its gloss (about 5–10 minutes). This step creates that traditional creamy texture. -
Add Nuts (Optional):
Stir in nuts if using. -
Pour & Set:
Pour the fudge into the prepared pan, spreading evenly. Sprinkle with flaky sea salt if desired. -
Cool & Cut:
Allow to set completely at room temperature (or in the fridge for faster setting). Cut into small squares.
Tips to Cherish:
-
Patience is key: True old-fashioned fudge rewards those who wait. Don’t rush cooling or beating.
-
No stirring while boiling: Stirring can cause grainy fudge.
-
Use a wooden spoon: Just like the old days — it beats air in perfectly!
Enjoy each creamy, chocolatey bite — a piece of sweet tradition in every square. ❤️
