Onion Chicken Thighs Recipe

Ingredients (Serves 4)

  • 6-8 bone-in, skin-on chicken thighs
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil (or butter)
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme (or rosemary)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1/2 cup chicken broth (or white wine)
  • 1 tablespoon balsamic vinegar (optional, for depth of flavor)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the Chicken:
    • Pat the chicken thighs dry with paper towels.
    • Season both sides with salt, pepper, paprika, garlic powder, onion powder, and thyme.
  2. Sear the Chicken:
    • Heat olive oil (or butter) in a large skillet over medium-high heat.
    • Place the chicken thighs skin-side down and sear for 5-6 minutes until golden brown and crispy. Flip and cook for another 3-4 minutes. Remove the chicken and set aside.
  3. Cook the Onions:
    • In the same skillet, reduce the heat to medium and add the sliced onions. Cook for 8-10 minutes, stirring occasionally, until the onions are soft and caramelized.
    • Add the minced garlic and cook for 1-2 minutes until fragrant.
  4. Combine and Simmer:
    • Return the chicken thighs to the skillet, skin-side up, nestling them into the onions.
    • Pour in the chicken broth (or white wine) and balsamic vinegar (if using). Scrape up any browned bits from the bottom of the pan.
    • Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C).
  5. Finish and Serve:
    • Remove the lid and let the sauce thicken slightly for 2-3 minutes.
    • Garnish with fresh parsley and serve hot.

  • Serve with mashed potatoes, rice, or crusty bread to soak up the delicious onion sauce.
  • Pair with a side of steamed vegetables or a fresh salad.
