Caldo de Albóndiga

Caldo de Albóndigas (Mexican Meatball Soup) is a comforting and flavorful dish made with tender meatballs, vegetables, and a savory broth. Here’s a traditional recipe:


Ingredients

For the Meatballs (Albóndigas):

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/4 cup uncooked white rice
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin (optional)

For the Soup:

  • 8 cups chicken or beef broth (or water with bouillon)
  • 1 cup tomato sauce or 2 chopped tomatoes
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and diced
  • 1 zucchini, sliced (optional)
  • 1 celery stalk, chopped (optional)
  • 1/2 cup chopped cilantro or parsley
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1-2 tbsp olive oil or vegetable oil

Instructions

Step 1: Prepare the Meatballs

  1. In a large bowl, combine the ground meat, rice, onion, garlic, cilantro, egg, salt, pepper, and cumin (if using). Mix well.
  2. Shape the mixture into small meatballs (about 1-1.5 inches in diameter). Set aside.

Step 2: Prepare the Soup Base

  1. In a large pot, heat the oil over medium heat. Add the chopped onion and garlic, and sauté until softened (about 2-3 minutes).
  2. Add the tomato sauce (or chopped tomatoes) and cook for another 2-3 minutes.
  3. Pour in the broth and bring to a gentle boil. Add the oregano, salt, and pepper.

Step 3: Cook the Meatballs and Vegetables

  1. Carefully drop the meatballs into the simmering broth. Let them cook for about 10 minutes.
  2. Add the carrots, potatoes, and celery (if using). Simmer for another 10-15 minutes, or until the vegetables are tender and the meatballs are cooked through.
  3. If using zucchini, add it in the last 5 minutes of cooking to prevent it from becoming too soft.

Step 4: Finish and Serve

  1. Taste the broth and adjust seasoning if needed. Stir in the chopped cilantro or parsley.
  2. Serve hot with warm tortillas, lime wedges, and a sprinkle of extra cilantro if desired.
