Coconut Cookie Roll

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 cup desiccated coconut
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

For rolling:

  • Extra desiccated coconut

Instructions:

  1. Prepare Dough:
    • In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  2. Add Flavor:
    • Mix in the vanilla extract and a pinch of salt.
  3. Incorporate Flour:
    • Gradually add the flour and desiccated coconut to the mixture, stirring until a dough forms. If the dough is too crumbly, you can add a tablespoon of milk or water to help it come together.
  4. Shape the Cookies:
    • Take small portions of the dough and roll them into small cylindrical shapes, about 2 inches long and 1/2 inch thick.
  5. Coat with Coconut:
    • Roll each cookie roll in extra desiccated coconut to coat evenly.
  6. Chill:
    • Place the coated cookie rolls on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to firm up.
  7. Bake:
    • Preheat your oven to 350°F (175°C). Bake the chilled cookie rolls for 12-15 minutes or until they turn light golden brown around the edges.
  8. Cool and Serve:
    • Allow the coconut cookie rolls to cool on a wire rack before serving. Enjoy them with a cup of tea or coffee!
