Cherry Tomato Soup Recipe

Ingredients (Serves 4)

  • 2 pints (about 4 cups) cherry tomatoes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2-3 garlic cloves, minced
  • 2 cups vegetable or chicken broth
  • 1 teaspoon sugar (optional, to balance acidity)
  • 1/2 teaspoon dried thyme or basil (or fresh herbs if available)
  • Salt and pepper to taste
  • 1/4 cup heavy cream or coconut milk (optional, for creaminess)
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare the Tomatoes
    Wash the cherry tomatoes and pat them dry. You can leave them whole for cooking.
  2. Sauté the Aromatics
    Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened (about 5 minutes). Add the minced garlic and cook for another minute until fragrant.
  3. Cook the Tomatoes
    Add the cherry tomatoes to the pot. Stir occasionally and cook for about 10 minutes, or until the tomatoes start to burst and release their juices.
  4. Simmer the Soup
    Pour in the broth and add the thyme or basil. Bring to a gentle boil, then reduce the heat and let it simmer for 15-20 minutes.
  5. Blend the Soup
    Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth (be cautious with hot liquids).
  6. Season and Finish
    Stir in the sugar (if using) and season with salt and pepper to taste. For a creamy version, add heavy cream or coconut milk and stir until combined.
  7. Serve
    Ladle the soup into bowls and garnish with fresh basil or parsley. Serve with crusty bread or a grilled cheese sandwich for a comforting meal.
