Cherry Tomato Soup Recipe
Ingredients (Serves 4)
- 2 pints (about 4 cups) cherry tomatoes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2-3 garlic cloves, minced
- 2 cups vegetable or chicken broth
- 1 teaspoon sugar (optional, to balance acidity)
- 1/2 teaspoon dried thyme or basil (or fresh herbs if available)
- Salt and pepper to taste
- 1/4 cup heavy cream or coconut milk (optional, for creaminess)
- Fresh basil or parsley for garnish
Instructions
- Prepare the Tomatoes
Wash the cherry tomatoes and pat them dry. You can leave them whole for cooking. - Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened (about 5 minutes). Add the minced garlic and cook for another minute until fragrant. - Cook the Tomatoes
Add the cherry tomatoes to the pot. Stir occasionally and cook for about 10 minutes, or until the tomatoes start to burst and release their juices. - Simmer the Soup
Pour in the broth and add the thyme or basil. Bring to a gentle boil, then reduce the heat and let it simmer for 15-20 minutes. - Blend the Soup
Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth (be cautious with hot liquids). - Season and Finish
Stir in the sugar (if using) and season with salt and pepper to taste. For a creamy version, add heavy cream or coconut milk and stir until combined. - Serve
Ladle the soup into bowls and garnish with fresh basil or parsley. Serve with crusty bread or a grilled cheese sandwich for a comforting meal.
Enjoy your homemade cherry tomato soup! It’s fresh, flavorful, and perfect for any season. 🍅✨
