Smothered Pork Chops Recipe

Ingredients:

  • 4 bone-in pork chops (about 1-inch thick)
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced (optional)
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp Worcestershire sauce
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the Pork Chops:
    • Pat the pork chops dry with paper towels.
    • Season them on both sides with salt, black pepper, garlic powder, onion powder, and smoked paprika.
  2. Sear the Pork Chops:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the pork chops and sear for about 3-4 minutes on each side until golden brown. Transfer the pork chops to a plate and set aside.
  3. Prepare the Gravy:
    • In the same skillet, reduce the heat to medium and add the butter.
    • Add the sliced onions and cook for 3-4 minutes until softened.
    • Add the garlic and mushrooms (if using) and cook for another 2 minutes until fragrant.
    • Sprinkle the flour over the onions and mushrooms and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  4. Make the Sauce:
    • Gradually whisk in the chicken broth until the mixture is smooth and begins to thicken.
    • Stir in the heavy cream and Worcestershire sauce.
    • Bring the mixture to a simmer, stirring occasionally.
  5. Cook the Pork Chops in the Sauce:
    • Return the pork chops to the skillet, nestling them into the sauce.
    • Reduce the heat to low, cover, and simmer for about 15-20 minutes until the pork chops are cooked through and tender.
  6. Serve:
    • Garnish with chopped parsley.
    • Serve the smothered pork chops with mashed potatoes, rice, or your favorite side dish.
