Ingredients (Serves 2):
- 200g (7 oz) spaghetti (or any pasta of your choice)
- 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red chili flakes (optional, for heat)
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
- Grated Parmesan cheese (optional, for serving)
Instructions:
- Cook the pasta:
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook according to the package instructions until al dente (usually 8-10 minutes).
- Reserve 1/2 cup of pasta water, then drain the pasta.
- Prepare the sauce:
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the sliced garlic and chili flakes (if using). Cook for 2-3 minutes, stirring frequently, until the garlic is golden but not browned (to avoid bitterness).
- Combine pasta and sauce:
- Add the cooked spaghetti to the skillet with the garlic and oil.
- Toss everything together, adding a splash of the reserved pasta water to help the sauce coat the pasta evenly.
- Season with salt and freshly ground black pepper to taste.
- Serve:
- Transfer to plates or bowls.
- Garnish with chopped parsley and grated Parmesan cheese, if desired.
