Simple Spaghetti with Garlic and Olive Oil (Aglio e Olio)

Ingredients (Serves 2):

  • 200g (7 oz) spaghetti (or any pasta of your choice)
  • 4 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red chili flakes (optional, for heat)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the pasta:
    • Bring a large pot of salted water to a boil.
    • Add the spaghetti and cook according to the package instructions until al dente (usually 8-10 minutes).
    • Reserve 1/2 cup of pasta water, then drain the pasta.
  2. Prepare the sauce:
    • While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
    • Add the sliced garlic and chili flakes (if using). Cook for 2-3 minutes, stirring frequently, until the garlic is golden but not browned (to avoid bitterness).
  3. Combine pasta and sauce:
    • Add the cooked spaghetti to the skillet with the garlic and oil.
    • Toss everything together, adding a splash of the reserved pasta water to help the sauce coat the pasta evenly.
    • Season with salt and freshly ground black pepper to taste.
  4. Serve:
    • Transfer to plates or bowls.
    • Garnish with chopped parsley and grated Parmesan cheese, if desired.
    • Enjoy immediately!

This recipe is quick, easy, and requires minimal ingredients. You can also customize it by adding vegetables, protein, or a squeeze of lemon juice for extra flavor!
