Roasted Garlic

Here’s a simple and delicious recipe for roasted garlic:

Ingredients

  • 1 or more whole garlic bulbs
  • Olive oil
  • Salt (optional)
  • Freshly ground black pepper (optional)
  • Fresh herbs like rosemary or thyme (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Garlic:
    • Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact.
    • Using a sharp knife, cut about 1/4 to 1/2 inch from the top of the cloves, exposing the individual cloves of garlic.
  3. Season the Garlic:
    • Place the garlic heads in a baking dish, cut side up.
    • Drizzle a couple of teaspoons of olive oil over each head, using your fingers to make sure the garlic head is well coated.
    • Optional: Sprinkle with salt, pepper, and fresh herbs if desired.
  4. Roast the Garlic:
    • Cover the baking dish with aluminum foil.
    • Bake for 30-35 minutes, or until the cloves feel soft when pressed.
  5. Cool and Serve:
    • Allow the garlic to cool enough so you can handle it.
    • Using a small knife or your fingers, squeeze the roasted garlic cloves out of their skins.
    • Use as a spread on bread, mix into mashed potatoes, or use in your favorite recipes.

Tips

  • Roasted garlic can be stored in the refrigerator for up to 2 weeks or frozen for longer storage.
  • You can roast several heads of garlic at once and store the extra for future use.
