Classic Apple Pie Recipe (Makes 2 Pies)
Ingredients
For the Pie Crust:
- 3 ½ cups all-purpose flour
- 1 ½ cups unsalted butter (cold and cut into cubes)
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 6-8 tablespoons ice water
For the Apple Filling:
- 6-7 medium Granny Smith apples (peeled, cored, and sliced)
- ¾ cup granulated sugar
- ¼ cup packed light brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 tablespoons lemon juice (about 1 lemon)
- 1 tablespoon unsalted butter (cut into small pieces)
For Assembly:
- 1 large egg (beaten, for egg wash)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions
1. Prepare the Pie Crust:
- In a large bowl, whisk together the flour, sugar, and salt. Add the cold butter cubes.
- Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits of butter remaining.
- Sprinkle 1 tablespoon of ice water over the mixture. Toss with a fork. Continue adding ice water, 1 tablespoon at a time, until the dough starts to come together.
- Divide the dough into two equal parts. Flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight).
2. Prepare the Apple Filling:
- In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss well to coat. Let the mixture sit for 10-15 minutes to allow the juices to mingle.
3. Assemble the Pies:
- Preheat your oven to 425°F (220°C).
- On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie pan. Carefully transfer it to the pie pan and trim the edges to leave a ½-inch overhang.
- Fill the pie crust with the apple mixture, mounding it slightly in the center. Dot with small pieces of butter.
- Roll out the second disk of dough and place it over the apples. Trim, tuck, and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg and sprinkle with granulated sugar.
- Place the pie on a baking sheet to catch any drips and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Repeat the above steps with the second disk of dough and remaining apple filling to make your second pie.
4. Cool and Serve:
- Allow the pies to cool on a wire rack for at least 2 hours before slicing. This will help the filling set and make for cleaner slices.
- Serve the pies warm or at room temperature. Enjoy as is or with a scoop of vanilla ice cream or a dollop of whipped cream.
