here’s a simple recipe for poppy seed muffins:

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon poppy seeds
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease each cup lightly.
  2. In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, and salt.
  3. In another bowl, whisk together the milk, melted butter, eggs, vanilla extract, and lemon zest (if using).
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
