Here’s a simple and delicious homemade mushroom stew recipe for you:

Ingredients:

  • 1 pound (450 grams) mixed mushrooms (e.g., cremini, button, shiitake), cleaned and sliced
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2-3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 large potato, peeled and diced
  • 4 cups vegetable broth
  • 1 cup dry white wine (optional, you can use more broth if preferred)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:
    • Clean and slice the mushrooms.
    • Chop the onion, garlic, carrots, celery, and potato.
  2. Sauté the Vegetables:
    • Heat the olive oil in a large pot over medium heat.
    • Add the onions and cook until they become translucent, about 5 minutes.
    • Add the garlic and cook for another minute until fragrant.
  3. Add the Mushrooms:
    • Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown, about 10 minutes.
  4. Add the Other Vegetables:
    • Stir in the carrots, celery, and potato. Cook for another 5 minutes, stirring occasionally.
  5. Deglaze the Pot:
    • Pour in the white wine (if using) and scrape the bottom of the pot to release any browned bits. Let the wine simmer for a couple of minutes to reduce slightly.
  6. Add the Broth and Seasonings:
    • Add the vegetable broth, tomato paste, thyme, rosemary, and bay leaf.
    • Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for about 30-40 minutes, or until the vegetables are tender.
  7. Season and Serve:
    • Season the stew with salt and pepper to taste.
    • Remove the bay leaf before serving.
    • Garnish with fresh parsley.
