Grilled Stuffed Mushrooms

Here’s a delicious recipe for Grilled Stuffed Mushrooms:

Ingredients:

  • 12 large mushrooms (such as portobello or cremini)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons melted butter
  • Fresh herbs for garnish (optional)

Instructions:

  1. Prepare the Mushrooms:
    • Clean the mushrooms with a damp paper towel. Carefully remove the stems and set them aside.
    • Preheat the grill to medium-high heat.
  2. Prepare the Filling:
    • Chop the mushroom stems finely.
    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
    • Add the chopped mushroom stems to the skillet and cook for another 3-4 minutes.
    • Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, parsley, salt, black pepper, and red pepper flakes (if using).
    • Add the cream cheese and mix until well combined.
  3. Stuff the Mushrooms:
    • Spoon the filling mixture into the mushroom caps, pressing it down gently to pack it in.
    • Top each stuffed mushroom with a sprinkle of shredded mozzarella cheese.
  4. Grill the Mushrooms:
    • Brush the grill grates with a little melted butter to prevent sticking.
    • Place the stuffed mushrooms on the grill, stuffed side up.
    • Close the grill lid and cook for about 10-15 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
  5. Serve:
    • Remove the mushrooms from the grill and let them cool slightly.
    • Garnish with fresh herbs if desired.
    • Serve warm and enjoy!

Tips:

  • You can add different herbs or spices to the filling according to your taste.
  • For a variation, try adding cooked sausage or bacon bits to the stuffing mixture.
