Garlic Steak & Potato Foil Packets Recipe
Ingredients:
- For the Steak:
- 1 ½ lbs (680g) sirloin steak, cut into 1-inch cubes
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp dried rosemary (or 2 tsp fresh rosemary, chopped)
- 1 tsp dried thyme (or 2 tsp fresh thyme, chopped)
- 1 tsp dried oregano
- Salt and pepper to taste
- For the Potatoes:
- 1 lb (450g) baby potatoes, halved or quartered depending on size
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- For Garnish:
- Fresh parsley, chopped
- Lemon wedges (optional)
Instructions:
1. Marinate the Steak:
- In a large bowl, combine the steak cubes with minced garlic, olive oil, Worcestershire sauce, rosemary, thyme, oregano, salt, and pepper. Mix well to ensure all the steak pieces are evenly coated.
- Cover the bowl with plastic wrap and let the steak marinate for at least 30 minutes. For more flavor, marinate in the refrigerator for up to 4 hours.
2. Prepare the Potatoes:
- While the steak is marinating, preheat your oven to 400°F (200°C).
- In a separate bowl, toss the halved or quartered potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Ensure the potatoes are well coated with the seasoning mixture.
3. Assemble the Foil Packets:
- Tear off four large sheets of heavy-duty aluminum foil, about 12×18 inches each. If you’re using standard foil, double up the sheets to prevent tearing.
- Divide the seasoned potatoes evenly among the foil sheets, placing them in the center.
- Divide the marinated steak cubes equally and place them on top of the potatoes.
- For an extra touch, add a small sprig of rosemary or thyme on top of each packet.
4. Seal the Packets:
- Fold the long sides of the foil over the steak and potatoes, bringing the edges together. Fold them over a couple of times to seal.
- Then fold in the short ends of the foil, rolling them up tightly to create a sealed packet. Make sure there are no gaps or holes in the foil.
5. Cook the Packets:
- Place the foil packets on a baking sheet (this will catch any leaks or drips) and bake in the preheated oven for 20-25 minutes.
- For medium-rare steak, cook for about 20 minutes. For medium to well-done, cook for 25 minutes or longer.
- Alternatively, you can cook the foil packets on a preheated grill over medium-high heat for 10-12 minutes per side.
6. Check for Doneness:
- Carefully open one of the foil packets to check if the steak is cooked to your desired level of doneness and the potatoes are tender. Be cautious of the steam that will escape when opening the packet.
- If needed, reseal and cook for an additional 5-10 minutes.
7. Serve:
- Once cooked, remove the packets from the oven or grill and let them rest for a few minutes before opening.
- Garnish the steak and potatoes with freshly chopped parsley.
- Serve directly from the foil packets for a rustic presentation. You can also transfer the contents to a plate if you prefer.
8. Optional Additions:
- For added flavor, you can drizzle the steak and potatoes with a bit of melted garlic butter before serving.
- A squeeze of fresh lemon juice over the steak can add a refreshing citrus note that complements the garlic and herbs.
Tips for Success:
- Choosing the Steak: Sirloin is a great choice for its balance of flavor and tenderness. However, you can also use other cuts like ribeye or tenderloin. Just adjust the cooking time based on the thickness and type of steak.
- Potatoes: Baby potatoes work well in this recipe because they cook evenly and quickly. If using larger potatoes, cut them into smaller pieces to ensure they cook through.
- Foil: Heavy-duty foil is recommended to prevent tearing and to ensure the packets hold up during cooking. Doubling the foil sheets is another option if using standard foil.
- Variations: Feel free to add other vegetables like bell peppers, onions, or mushrooms to the packets for a complete meal. Just ensure they are cut into similarly sized pieces as the potatoes for even cooking.
Storage:
If you have leftovers, store the steak and potatoes in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
