Ingredients:
- 1/2 cup (100g) white rice (short-grain or Arborio rice works best)
- 4 cups (950ml) whole milk (or substitute with half milk and half cream for extra richness)
- 1/3 cup (65g) granulated sugar (adjust to taste)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup (75g) raisins (optional)
- 1-2 tablespoons butter (optional, for added richness)
Instructions:
- Rinse the Rice:
- Rinse the rice under cold water to remove excess starch.
- Cook the Rice:
- In a medium-sized saucepan, combine the rinsed rice, milk, sugar, and salt.
- Bring to a gentle boil over medium heat, stirring occasionally to prevent sticking.
- Simmer:
- Reduce the heat to low and let the mixture simmer uncovered for about 25-30 minutes, stirring frequently, until the rice is tender and the mixture has thickened.
- Add Flavorings:
- Stir in the vanilla extract, cinnamon, nutmeg, and raisins (if using). Cook for another 2-3 minutes.
- For extra creaminess, stir in the butter at the end.
- Cool and Serve:
- Remove from heat and let the pudding cool slightly. It will thicken further as it cools.
- Serve warm or chilled, topped with a sprinkle of cinnamon or a drizzle of honey.
