Creamy Rice Pudding Recipe

Ingredients:

  • 1/2 cup (100g) white rice (short-grain or Arborio rice works best)
  • 4 cups (950ml) whole milk (or substitute with half milk and half cream for extra richness)
  • 1/3 cup (65g) granulated sugar (adjust to taste)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup (75g) raisins (optional)
  • 1-2 tablespoons butter (optional, for added richness)

Instructions:

  1. Rinse the Rice:
    • Rinse the rice under cold water to remove excess starch.
  2. Cook the Rice:
    • In a medium-sized saucepan, combine the rinsed rice, milk, sugar, and salt.
    • Bring to a gentle boil over medium heat, stirring occasionally to prevent sticking.
  3. Simmer:
    • Reduce the heat to low and let the mixture simmer uncovered for about 25-30 minutes, stirring frequently, until the rice is tender and the mixture has thickened.
  4. Add Flavorings:
    • Stir in the vanilla extract, cinnamon, nutmeg, and raisins (if using). Cook for another 2-3 minutes.
    • For extra creaminess, stir in the butter at the end.
  5. Cool and Serve:
    • Remove from heat and let the pudding cool slightly. It will thicken further as it cools.
    • Serve warm or chilled, topped with a sprinkle of cinnamon or a drizzle of honey.

Tips:

  • For a richer flavor, use coconut milk or almond milk instead of regular milk.
  • Add a splash of heavy cream at the end for an even creamier texture.
  • Top with fresh fruit, nuts, or a dollop of whipped cream for extra indulgence.
