Bacon Pasta with Burrata Recipe
Ingredients:
- 200g (7 oz) pasta (such as spaghetti, fettuccine, or penne)
- 150g (5.3 oz) bacon, chopped
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (400g/14 oz) diced tomatoes
- 1/2 cup heavy cream
- Salt and pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
- 1 ball of burrata cheese
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
- Olive oil, for cooking
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente.
- Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.
- Cook the Bacon:
- In a large skillet, cook the chopped bacon over medium heat until crispy.
- Remove the bacon from the skillet and place it on a paper towel-lined plate to drain.
- Leave about 1 tablespoon of bacon fat in the skillet and discard the rest.
- Prepare the Sauce:
- In the same skillet with the bacon fat, add a drizzle of olive oil if needed.
- Sauté the minced garlic and chopped onion until the onion becomes translucent, about 3-4 minutes.
- Add the diced tomatoes and cook for another 5 minutes, allowing the sauce to thicken slightly.
- Stir in the heavy cream, and season with salt, pepper, and red pepper flakes if using.
- Let the sauce simmer for a few more minutes until well combined.
- Combine Pasta and Sauce:
- Add the cooked pasta to the skillet with the sauce.
- Toss to coat the pasta evenly, adding a bit of the reserved pasta water if the sauce is too thick.
- Stir in the crispy bacon pieces.
- Serve:
- Divide the pasta among serving plates.
- Tear the burrata cheese into pieces and place on top of the pasta.
- Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese.
- Drizzle with a bit of olive oil if desired.
