Mexican Shrimp cocktail

Here’s a classic Mexican Shrimp Cocktail (Cóctel de Camarones) recipe for you:

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 cups tomato juice (preferably Clamato)
  • 1/4 cup ketchup
  • 2 tbsp hot sauce (such as Valentina or Tapatío, adjust to taste)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomato
  • 1/2 cup chopped avocado
  • 1/4 cup chopped cilantro
  • Salt and pepper, to taste
  • Tortilla chips or saltine crackers, for serving

Instructions:

  1. Cook the Shrimp: Bring a pot of salted water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from the pot and place the shrimp in an ice bath to cool quickly. Drain and chop the shrimp into bite-sized pieces.
  2. Prepare the Cocktail Sauce: In a large bowl, combine the tomato juice, ketchup, hot sauce, and lime juice. Stir well until the ingredients are mixed thoroughly.
  3. Add Vegetables: Add the chopped red onion, cucumber, tomato, avocado, and cilantro to the sauce. Mix well.
  4. Combine: Add the cooled shrimp to the mixture and stir gently to combine. Season with salt and pepper to taste.
  5. Chill: Cover and refrigerate for at least 30 minutes to let the flavors meld together.
  6. Serve: Serve chilled, accompanied by tortilla chips or saltine crackers.
